Francis has been growing certified organic garlic for 8 years and we always have garlic in spring and summer. Keep an eye out in October for green garlic and December for bulbs that will last you until March. You need to store it out of the sun, in a dry airy place.
Garlic scapes are the flower/seed head that we pull out before we harvest the garlic. It is the texture of asparagus with a mild garlic flavour. These have been pickled and canned and will last for ages in a cool dark place unopened. Perfect on a cheese plate or on a toasted sandwich. The perfect gift for Christmas!
Black garlic is slow cooked, fermented garlic. It has a umami flavour and is delicious on a cheese plate, stirred through scrambled eggs or shaved on pasta.
